Green Food

I have been remiss in posting to this blog very frequently – mostly because I’ve been so busy with my other blog.  So thank goodness for #letslunch that keeps me coming back here!  This month’s them is green food, I am assuming, in deference to St Patrick’s Day next weekend.  Now, I just returned from vacation so I am trying to eat a bit on the lighter side – green is perfect for that.

One of my favorite vegetables is asparagus.  I could eat it every day.  But I don’t really care for it steamed  - I prefer it pan roasted with a little olive oil, lemon juice and herbs de provence.

I also cooked up a little chopped maple smoked bacon and poached an egg to be the ‘sauce’ instead of something heavy like hollandaise.  Don’t get me wrong, I love hollandaise but until my waistbands are comfortable again, I’m going to skip it.
Now there is a lot of debate about how to poach the perfect egg and frankly I don’t know who is right or wrong so I simply place the egg into hot water that’s just below simmering and add a little shot of white vinegar & let it do its own thing.  I don’t whirlpool or crack it into a ramekin first but then I am inherently lazy.  Mine turned out perfectly to my liking anyway.  I’d love to hear how you do yours!

  3. Steaming asparagus is my least favorite method, too. Can't wait to try the poached egg with roasted asparagus! #letslunch

  4. Yummy, Karen esp. with bacon addition! I don't tend to 'poach' my eggs but yours looks like how I like mine too. I do a combo of stir fry and add a tiny bit of water to steam fry if they are very thick, so I get the best of both worlds. Gonna check your "other" blog.
